Production of Tofu

After producing your soy drinks with your VEGAN STAR re-heat your drinks to 90°.
Remove the pan from the hob and stir in a large tablespoon of freshly pressed lemon juice (no alternative!).
Leave to stand for about 20 minutes.
Pour the curdled milk (drink?????) into a tofu-form (noodle sieve etc.) lined with a cotton cloth and leave to drain.
For compact tofu fold the cloth together, weigh down with an approx, 1 kg weight and leave to stand in the fridge for several hours.
Place your tofu in cold salt water and keep in the fridge (can be kept for up to a week – change the water once a day).
Should you wish to keep tofu in the fridge it will become crumbly.
Your tofu will become extra firm if you put it into the freezer for a short time (not longer than 15 minutes).
1.3 lt. of soy drink will give you 15 dg of tofu.
